During World War I, there were reports of people being poisoned by eating rhubarb leaves, mistakenly believing them to be a food source during times of food shortages.

While many healthy vegetables, such as spinach and broccoli, contain small amounts of oxalic acid, the concentration in rhubarb leaves is much higher, making them potentially dangerous.

So, be sure to remove the leaves before cooking rhubarb. Wash the stems thoroughly and remove the leaves to ensure safe and enjoyable cooking.

Beans are a great source of plant-based protein and fiber. However, if not prepared properly, they can cause digestive problems.

This is especially true for red kidney beans, which contain a protein called phytohemagglutinin (PHA).

In nature, this protein protects the beans from being eaten by animals, but it can be dangerous for humans. When eaten, PHA can cause nausea, vomiting, abdominal pain, and diarrhea.

The problem is that boiling beans briefly at low temperatures not only does not destroy PHA, but also increases its toxicity!

8.Nutmeg

If you notice that your potatoes have turned green or sprouted, it is better not to eat them. Green potatoes and sprouts contain solanine, a substance that protects the plant from insects, diseases, and herbivores.

In large quantities, solanine can be harmful to humans and cause symptoms such as vomiting, diarrhea, fever, jaundice, irregular heartbeat, nightmares, hallucinations, numbness, and paralysis. In severe cases, it can even lead to death.

The green color of potatoes is due to chlorophyll, which is harmless in itself, but indicates the presence of solanine. Solanine levels increase when exposed to light and heat.

To reduce the risk, it is recommended to store potatoes in a cool, dark place, cut off any green spots or sprouts, and cook them thoroughly before eating. Discard mostly green potatoes. Solanine levels are highest in sprouts, flowers, and leaves, so avoid eating these parts.

Cashews are in the same plant family as poison ivy, mangoes, and pistachios, so you need to be careful when purchasing and eating these nuts.
